Ingredients

- 1 tsp salt
- 2 tbsp vegetable oil

Cut the 1 lb pork rind into 1-inch pieces. Place in a large pot and cover with water. Bring to a boil, then reduce to a simmer and cook until tender, about 30 minutes.

Drain the pork rind and pat dry with paper towels. Spread on a baking sheet and refrigerate, uncovered, for at least 1 hour or overnight to dry out.

Heat the 2 tbsp vegetable oil in a large skillet over medium-high heat. Add the pork rind pieces in a single layer, working in batches if needed.

Fry, turning occasionally, until golden and crispy, about 5-7 minutes. The rind should be puffed and crunchy.
