Ingredients

  • 1 lb pork rind
  • 1 tsp salt
  • 2 tbsp vegetable oil

Instructions

  1. 1

Cut the 1 lb pork rind into 1-inch pieces. Place in a large pot and cover with water. Bring to a boil, then reduce to a simmer and cook until tender, about 30 minutes.

  2. 2

Drain the pork rind and pat dry with paper towels. Spread on a baking sheet and refrigerate, uncovered, for at least 1 hour or overnight to dry out.

  3. 3

Heat the 2 tbsp vegetable oil in a large skillet over medium-high heat. Add the pork rind pieces in a single layer, working in batches if needed.

  4. 4

Fry, turning occasionally, until golden and crispy, about 5-7 minutes. The rind should be puffed and crunchy.

  5. 5

Remove with a slotted spoon and drain on paper towels. Sprinkle with the 1 tsp salt while still hot. Serve immediately.

  6. 6

For extra flavor, toss with chili powder or garlic powder before serving if you have them.
