Ingredients
- ½ lb pork shoulder, thinly sliced
- ¼ cup fresh orange juice
- 2 tbsp lime juice
- ¼ lb deli ham, thinly sliced
- 4 oz Swiss cheese, sliced
- 2 whole Cuban or pressed sandwich rolls (or ciabatta)
- ½ cup dill pickle spears
- 2 tbsp yellow mustard

Toss pork slices with orange juice, lime juice, salt, and pepper. Heat a skillet over medium-high and cook pork 6 minutes, stirring, until edges brown.

Slice rolls in half lengthwise. Spread mustard on one side of each roll.

Layer on the mustard side: cooked pork, ham, a few pickles, then Swiss cheese on top.

Close the sandwich and brush the outside lightly with olive oil on both sides.

Place sandwich in the skillet over medium. Press down hard with a heavy weight (another skillet, cast-iron press, or a spatula) for 3 minutes until golden and cheese melts.

Flip, press again for 2 minutes until the other side is golden brown and crispy. Serve hot.
