Ingredients
- 4 medium russet potatoes
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- ½ cup sour cream
- 2 tbsp fresh chives

Preheat oven to 400°F. Scrub the 4 potatoes and prick each with a fork. Microwave for 5 minutes to speed up cooking, or skip if you prefer.

Cut each potato in half lengthwise. Scoop out most of the flesh, leaving a 1/4-inch shell. Save the scooped potato for another use.

Brush both sides of the skins with the 2 tbsp olive oil. Sprinkle with the 1 tsp salt and 1/2 tsp pepper. Place cut-side down on a baking sheet.

Bake for 20-25 minutes until the skins are crisp and golden brown, flipping halfway. They should feel firm and look lightly blistered.

Flip the skins cut-side up. Top each with a spoonful of the 1/2 cup sour cream and sprinkle with the 2 tbsp chopped chives. Serve warm.
