Ingredients
- 2 large potatoes
- 1 large egg
- 2 tbsp all-purpose flour
- ½ tsp salt
- 3 tbsp vegetable oil
- 2 tbsp sour cream

Peel and grate the 2 large potatoes. Squeeze out as much liquid as possible using a clean kitchen towel.

In a bowl, mix the grated potatoes with 1 egg, 2 tbsp flour, and 0.5 tsp salt until well combined.

Heat 2 tbsp of the vegetable oil in a large skillet over medium-high heat. Drop spoonfuls of the potato mixture into the hot oil, flattening them into pancakes.

Cook until golden brown and crispy on the bottom, about 3-4 minutes. Flip and cook the other side until golden, another 3-4 minutes. Add the remaining 1 tbsp oil if needed.
