Ingredients

  • 1.5 lb potatoes
  • 6 oz bacon
  • 1 medium onion
  • 1 cup shredded Gruyère cheese
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper

    Preheat oven to 400°F. Slice potatoes into 1/4-inch rounds. Toss with 1 tbsp olive oil, 0.5 tsp salt, and 0.25 tsp pepper.

    Cook 6 oz bacon in a 9-inch oven-safe skillet over medium heat until crispy, about 6-8 minutes. Remove bacon, leaving 1 tbsp drippings in skillet.

    Add 1 sliced onion to skillet and cook until soft and golden, about 5 minutes. Stir in potatoes and cook, stirring occasionally, until slightly browned, about 8 minutes.

    Crumble bacon over potatoes and stir to combine. Sprinkle 1 cup shredded Gruyère evenly over the top.
