Ingredients

  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 can (14 oz) canned diced tomatoes
  • ½ cup dry white wine
  • 1 lb cod or halibut fillets, cut into 2-inch chunks
  • ¾ lb large shrimp, peeled and deveined
  • 1 medium yellow onion, diced
  • 1 pinch salt and black pepper to taste

Instructions

    Heat olive oil in a large pot over medium-high heat until it shimmers, about 60 seconds.

    Add diced onion and cook, stirring often, until edges soften, about 3 minutes.

    Stir in garlic and cook until fragrant, 30–45 seconds—don't let it brown.

    Pour in white wine and scrape up any stuck bits, then add canned tomatoes with juice. Bring to a simmer.

    Add fish chunks and shrimp, stirring gently. Simmer uncovered until fish is opaque and shrimp pink, 6–8 minutes.
