Ingredients

  • 2.5 cups all-purpose flour
  • ¾ cup butter, softened
  • ¾ cup granulated sugar
  • 3 large eggs
  • 1 cup candied fruit (orange peel, lemon peel, glacé cherries), chopped
  • ¾ cup whole almonds or hazelnuts, roughly chopped

    Preheat oven to 350°F. Grease a 10-inch ring mold or bundt pan with butter.

    Cream butter and sugar together until pale and fluffy, about 3 minutes with an electric mixer.

    Beat in eggs one at a time, mixing until fully incorporated after each addition.

    Fold in flour gently with a spatula until just combined, then fold in candied fruit and nuts.

    Pour batter into prepared mold and smooth the top with a spatula.
