Ingredients
- 1.5 cups yellow split peas, rinsed
- 1 lb rotisserie pork, shredded or cubed
- 1 medium yellow onion, diced
- 6 cups vegetable or chicken broth
- 2 sprigs thyme (fresh or 0.5 tsp dried)
- 1 whole bay leaf
Instructions

Combine peas, broth, onion, thyme, and bay leaf in a pot. Bring to a boil, then reduce heat.

Simmer 10–12 minutes until peas soften and start to break down, stirring occasionally.

Stir in shredded pork and cook 2 minutes until heated through.

Remove thyme sprigs and bay leaf. Season with salt and pepper to taste.
