Ingredients

  • 1.5 cups yellow split peas, rinsed
  • 1 lb rotisserie pork, shredded or cubed
  • 1 medium yellow onion, diced
  • 6 cups vegetable or chicken broth
  • 2 sprigs thyme (fresh or 0.5 tsp dried)
  • 1 whole bay leaf

Instructions

    Combine peas, broth, onion, thyme, and bay leaf in a pot. Bring to a boil, then reduce heat.

    Simmer 10–12 minutes until peas soften and start to break down, stirring occasionally.

    Stir in shredded pork and cook 2 minutes until heated through.

    Remove thyme sprigs and bay leaf. Season with salt and pepper to taste.

    If you prefer a creamier texture, mash some peas against the side of the pot with a wooden spoon.
