Ingredients

  • 1 lb ground pork
  • ⅓ cup panko breadcrumbs
  • 1 whole egg
  • ½ cup lingonberry jam or sauce
  • ½ cup beef or chicken broth
  • 1 tbsp dijon mustard
  • 1 whole shallot, minced

Instructions

    Mix ground pork, panko, egg, minced shallot, salt, and pepper in a bowl until just combined.

    Roll mixture into 12–16 meatballs about the size of golf balls. Set aside on a plate.

    Heat oil in a large skillet over medium-high until shimmering. Working in batches, sear meatballs without stirring for 2 minutes until edges brown, then shake the pan to roll them and cook 2 minutes more until golden on another side.

    Whisk lingonberry jam, broth, and mustard in a small bowl, then pour over meatballs. Reduce heat to medium and simmer for 5 minutes until sauce coats and meatballs are cooked through.
