Pork Dumplings

Tender steamed or pan-fried dumplings filled with seasoned ground pork and vegetables. A classic Chinese dim sum favorite that's crispy on one side and juicy on the other.

Ingredients

  • ½ lb ground pork
  • 1 cup napa cabbage, finely chopped
  • 3 stalks green onions, minced
  • 1 tbsp fresh ginger, minced
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • ¼ tsp white pepper
  • 24 pieces round dumpling wrappers
  • 2 tbsp water
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tsp chili oil

Instructions

    Chop cabbage finely and squeeze out excess moisture in a clean kitchen towel. Transfer to a bowl.

    Add ground pork, green onions, ginger, garlic, soy sauce, sesame oil, and white pepper to the cabbage. Mix until just combined.

    Place 1 teaspoon filling in the center of each wrapper. Wet the edge with water and fold in half, then pleat the curved edge.

    Set dumplings seam-side up on a parchment-lined tray. Cover with a damp towel until ready to cook.

    For pan-fried: Heat 2 tbsp oil in a 12-inch nonstick skillet over medium-high. Arrange dumplings flat-side down, cook 2 minutes until golden.

    Add 0.5 cup water, cover, and steam for 6-8 minutes until water evaporates and filling is cooked through.

    Alternatively, steam in a bamboo steamer over boiling water for 10 minutes until dumplings are translucent.

    Mix soy sauce, vinegar, and chili oil in a small bowl. Serve dumplings hot with dipping sauce.
