Ingredients
- 4 pieces (4–5 oz each) pork loin cutlets (or thin-sliced pork chops)
- 4 slices sliced deli ham
- 4 slices Swiss cheese slices
- ½ cup all-purpose flour
- 1 large, beaten egg
- ½ cup panko breadcrumbs
Instructions
- 1
Place a pork cutlet between two pieces of plastic wrap and pound until 1/4-inch thick.
- 2
Lay one ham slice and one cheese slice on each cutlet, leaving a 1/2-inch border. Roll tightly and secure with a toothpick if needed.
- 3
Set up three shallow bowls: flour in the first, beaten egg in the second, panko in the third. Season flour with salt and pepper.
- 4
Coat each pork roll in flour, then egg, then panko, pressing gently so crumbs stick. Place on a clean plate.
- 5
Heat 2 tbsp butter and 1 tbsp olive oil in a 12-inch skillet over medium-high heat until the oil shimmers, about 90 seconds.
- 6
Sear pork rolls 3 minutes per side without moving until the coating turns golden brown and cheese begins to melt inside.
