Ingredients

- 1 medium onion, diced
- 2 medium potatoes, diced small
- 4 cups vegetable broth
- 3 medium cucumbers, peeled and diced
- ¾ cup sour cream
- 3 tbsp fresh dill, chopped (plus more for serving)

Melt butter in a large pot over medium heat, ~1 minute.
