Ingredients

  • 2 tbsp butter
  • 1 medium onion, diced
  • 2 medium potatoes, diced small
  • 4 cups vegetable broth
  • 3 medium cucumbers, peeled and diced
  • ¾ cup sour cream
  • 3 tbsp fresh dill, chopped (plus more for serving)

Instructions

    Melt butter in a large pot over medium heat, ~1 minute.

    Add diced onion and sauté until translucent, stirring occasionally, 4 minutes.

    Pour in broth and add potatoes. Bring to a boil, then reduce heat and simmer.

    Add diced cucumbers and simmer until potatoes and cucumbers are tender, 8 minutes.

    Remove from heat. Stir in sour cream and fresh dill until smooth and combined.

    Season with salt and pepper to taste. Serve hot, garnished with more dill.
