Ingredients
- 1 cup poha (flattened rice)
- 1 medium onion
- 1 medium carrot
- 4 leaves lettuce leaves
- ¼ cup green chutney
- ½ teaspoon turmeric powder

Rinse 1 cup poha in a strainer under cold water until just softened, about 30 seconds. Drain well and set aside.

Thinly slice the onion and carrot into matchsticks. Lay the lettuce leaves flat, divide the vegetables among them, roll up tightly, and slice each roll into 2-inch pieces.

Heat 1 tbsp oil in a skillet over medium. Add 1 tsp mustard seeds and a few curry leaves if you have them; cook until they splutter, about 30 seconds.

Add the rinsed poha, 0.5 tsp turmeric, and salt to taste. Stir gently over low heat until the poha is warm and evenly yellow, about 3-4 minutes.

Serve the poha warm with the vegetable rolls and 0.25 cup green chutney on the side for dipping.
