Ingredients
- 1.5 cups poha (flattened rice)
- 1 medium (about 6 oz) waxy potatoes, diced small
- ⅓ cup roasted peanuts (unsalted)
- ½ medium onion, diced small
- 2 tbsp oil
- 1 set lemon juice, salt, turmeric, and green chili powder to taste

Rinse poha in a fine-mesh strainer under cool water for 30 seconds until just moist; let drain.

Cut potatoes into 1/4-inch dice and onion into small dice.

Heat oil in a large skillet over medium-high until it shimmers, about 1 minute.

Add diced potatoes and cook without stirring for 2 minutes until the edges begin to turn golden.

Stir potatoes and cook another 2–3 minutes until they soften and the edges crisp slightly.

Add diced onion and cook, stirring, until softened and fragrant, about 90 seconds.

Add drained poha and peanuts, tossing gently to combine, about 1 minute.
