Ingredients
- 1 cup all-purpose flour
- ¾ cup potato starch
- 4 whole plums, pitted
- 3 tbsp butter
- 2 tbsp granulated sugar
- ½ tsp ground cinnamon

Mix flour, potato starch, salt, and 1/2 cup cold water in a bowl until a soft, sticky dough forms.

Bring a large pot of salted water to a boil.

Working with wet hands, scoop a spoonful of dough, place a plum in the center, wrap dough around it, and seal gently into a ball. Repeat with remaining dough and plums.

Drop dumplings into boiling water. They'll sink, then float to the surface after 2-3 minutes. Simmer 1 more minute, then remove with a slotted spoon.

Melt butter in a large skillet over medium heat until it foams and turns golden brown, ~2 minutes. Add dumplings and roll gently to coat.
