Ingredients

  • 1.5 lb green plantains (or yellow if green unavailable)
  • ¾ cup natural peanut butter (or roasted unsalted peanuts)
  • 1 can (14 oz) crushed tomatoes (canned)
  • 1 cup vegetable broth
  • 1 whole scotch bonnet or habanero pepper (optional, whole)
  • 1 tbsp ginger, freshly grated

Instructions

  1. 1

Peel plantains and cut into 2-inch chunks. Boil in salted water until fork-tender, about 12 minutes.

  2. 2

While plantains cook, heat oil in a separate pot over medium. Add ginger and cook 30 seconds until fragrant.

  3. 3

Stir in peanut butter, crushed tomatoes, and broth. Add whole pepper if using. Simmer 8 minutes, stirring often.

  4. 4

Drain plantains. In a large bowl or pot, mash with a wooden spoon until smooth and creamy, about 2 minutes.

  5. 5

Season peanut sauce with salt and pepper to taste. Remove whole pepper before serving.

  6. 6

Mound fufu on a plate and pour peanut sauce over the top. Serve hot with extra sauce on the side.

Tools you’ll need

  • large pot (for boiling plantains)
  • separate medium pot (for sauce)
  • wooden spoon or sturdy masher
  • cutting board and knife
  • kitchen towel or paring knife (for peeling)
