Ingredients
- 1.5 lb green plantains (or yellow if green unavailable)
- ¾ cup natural peanut butter (or roasted unsalted peanuts)
- 1 can (14 oz) crushed tomatoes (canned)
- 1 cup vegetable broth
- 1 whole scotch bonnet or habanero pepper (optional, whole)
- 1 tbsp ginger, freshly grated

Peel plantains and cut into 2-inch chunks. Boil in salted water until fork-tender, about 12 minutes.

While plantains cook, heat oil in a separate pot over medium. Add ginger and cook 30 seconds until fragrant.

Stir in peanut butter, crushed tomatoes, and broth. Add whole pepper if using. Simmer 8 minutes, stirring often.

Drain plantains. In a large bowl or pot, mash with a wooden spoon until smooth and creamy, about 2 minutes.

Season peanut sauce with salt and pepper to taste. Remove whole pepper before serving.
