Ingredients
- 250 g pizza dough (store-bought or homemade)
- 100 g fresh mozzarella, torn into pieces
- 75 g gorgonzola cheese, crumbled
- 75 g fontina cheese, sliced thin
- 50 g parmigiano-reggiano, grated
- 2 tbsp olive oil
- 1 small handful fresh thyme or arugula (optional garnish)
- ½ tsp sea salt
- ¼ tsp freshly cracked black pepper

Preheat oven to 475°F (245°C) or prepare pizza stone/wood-fired oven.

If using homemade dough, let it come to room temperature for 15 minutes.

Tear mozzarella into bite-sized pieces and crumble gorgonzola. Slice fontina thinly and grate parmigiano-reggiano.

Stretch dough into a 10-12 inch round on a pizza peel or baking sheet.

Brush dough lightly with 1 tbsp olive oil.

Distribute mozzarella evenly, followed by gorgonzola crumbles and fontina slices.
