Ingredients

  • 250 g pizza dough (store-bought or homemade)
  • 100 g fresh mozzarella, torn into pieces
  • 75 g gorgonzola cheese, crumbled
  • 75 g fontina cheese, sliced thin
  • 50 g parmigiano-reggiano, grated
  • 2 tbsp olive oil
  • 1 small handful fresh thyme or arugula (optional garnish)
  • ½ tsp sea salt
  • ¼ tsp freshly cracked black pepper

Instructions

    Preheat oven to 475°F (245°C) or prepare pizza stone/wood-fired oven.

    If using homemade dough, let it come to room temperature for 15 minutes.

    Tear mozzarella into bite-sized pieces and crumble gorgonzola. Slice fontina thinly and grate parmigiano-reggiano.

    Stretch dough into a 10-12 inch round on a pizza peel or baking sheet.

    Brush dough lightly with 1 tbsp olive oil.

    Distribute mozzarella evenly, followed by gorgonzola crumbles and fontina slices.

    Sprinkle parmigiano-reggiano over top. Season with sea salt and black pepper.

    Transfer to oven and bake 12-15 minutes until crust is golden and cheese is melted and bubbly.

    Remove from oven, drizzle with remaining 1 tbsp olive oil, and top with fresh thyme or arugula if desired.
