Ingredients

  • 1 loaf (about 10 oz) store-bought sponge cake or pound cake
  • 2 cups powdered sugar
  • 3 tbsp rum or rum extract
  • 2 tbsp apricot jam or marmalade
  • ¾ cup unsweetened shredded coconut
  • 2 drops pink food coloring
  • 1 tbsp milk

Instructions

    Cut the cake into 1-inch cubes and spread on a plate to cool while you make the glaze.

    Whisk powdered sugar, rum, apricot jam, and milk in a small bowl until smooth and glossy.

    Add pink coloring drop by drop, stirring until the glaze is pale pink.

    Spread shredded coconut on a shallow plate.

    Dip each cake cube into the glaze, coating all sides, then roll in coconut.

    Set glazed cubes on a wire rack or plate and let sit 5 minutes for the glaze to set.
