Ingredients

  • 2.5 cups cooked jasmine rice (day-old or cooled)
  • ¾ lb large shrimp, peeled and deveined
  • 1.25 cups fresh pineapple, cut into 0.75-inch chunks
  • 1 medium cucumber, sliced into thin rounds
  • 2 tbsp soy sauce
  • 3 stalks scallions, sliced thin

Instructions

    Heat 2 tbsp oil in a large skillet over high heat until it shimmers, about 60 seconds.

    Add shrimp and cook without stirring for 90 seconds, then flip and cook 90 seconds until pink.

    Push shrimp to the side; add rice and break up any clumps while stirring constantly, 3 minutes.

    Toss in pineapple chunks and soy sauce, stirring constantly until rice is heated through, 2 minutes.
