- ¾ lb large shrimp, peeled and deveined
- 1.25 cups fresh pineapple, cut into 0.75-inch chunks
- 1 medium cucumber, sliced into thin rounds
- 2 tbsp soy sauce
- 3 stalks scallions, sliced thin
