Ingredients

  • 3 cups cooked jasmine rice, chilled
  • 1.5 cups fresh pineapple, cut into 0.5-inch chunks
  • 1 medium tomato, sliced into wedges
  • 2 tbsp soy sauce
  • 2 tbsp neutral cooking oil
  • 2 cloves garlic, minced

Instructions

    Heat oil in a large skillet over medium-high until it shimmers, about 90 seconds.

    Add garlic and cook for 30 seconds until fragrant, stirring constantly.

    Add rice, breaking up any clumps, and stir-fry for 3 minutes until edges start to crisp.
