Ingredients

  • 3 cups cooked jasmine rice, chilled
  • 1.5 cups fresh pineapple, cut into 3/4-inch chunks
  • 2 tbsp soy sauce
  • 2 tbsp neutral cooking oil
  • 1 whole cucumber, sliced into thin rounds
  • 1 whole lime, cut into wedges

Instructions

    Heat oil in a large skillet over medium-high heat until it shimmers, about 90 seconds.

    Add the chilled rice and break up any clumps, stirring constantly for 3 minutes.

    Stir in the pineapple chunks and soy sauce, tossing to coat evenly, for 2 minutes.
