Ingredients
- ½ lb ground beef (80/20)
- ¾ cup sharp cheddar, shredded
- ¼ cup jarred pimentos, drained and chopped
- 3 tbsp mayonnaise
- 2 count burger buns
- 1 tbsp butter

Stir cheddar, pimentos, and mayo together in a small bowl until combined. Set aside.

Divide ground beef in half and form two loose patties about 0.75-inch thick. Make a small dimple in the center of each with your thumb.

Heat oil in a 12-inch skillet over medium-high until it shimmers, about 90 seconds.

Place patties in the skillet and let them sit undisturbed for 3 minutes until the bottom browns, then flip and cook 2 minutes more.

Spoon pimento cheese onto each patty while still in the skillet. Cover with a lid and cook 1 minute until cheese melts.

Butter the burger buns and toast them in the skillet 30 seconds per side until golden. Top each bun with a cheese-loaded patty and serve hot.
