Ingredients
- 2 cups pickled cucumbers
- ½ lb pork (thinly sliced)
- 2 red chili peppers
- 2 cloves garlic
- 1 tbsp soy sauce
- 2 tbsp vegetable oil
- 1 tsp sugar

Slice the 2 pickled cucumbers into thin rounds. Thinly slice the 0.5 lb pork and mince the 2 garlic cloves. Slice the 2 red chili peppers into thin rings.

Heat 1 tbsp of the vegetable oil in a wok or large skillet over high heat until shimmering. Add the pork and stir-fry until browned and cooked through, about 3-4 minutes. Remove pork and set aside.

Add the remaining 1 tbsp oil to the same pan. Add the garlic and chili peppers, stir-fry until fragrant, about 30 seconds.

Return the pork to the pan. Add the pickled cucumbers, 1 tbsp soy sauce, and 1 tsp sugar. Stir-fry everything together for 2-3 minutes until the cucumbers are heated through and slightly softened.
