Ingredients

  • 6 cups beef or vegetable broth
  • 8 oz fresh rice noodles
  • 2 whole star anise
  • 1 whole cinnamon stick
  • 1 tbsp ginger, sliced
  • 1.5 tbsp fish sauce
  • 1 lime + handful herbs lime (juice) and fresh herbs (basil, cilantro, mint), chopped

Instructions

    Bring broth to a boil in a large pot over high heat, ~5 minutes.

    Add star anise, cinnamon, and ginger slices. Simmer 3 minutes until fragrant.

    Stir in fish sauce and taste—adjust salt and fish sauce as needed.

    Add rice noodles and cook until tender, ~2 minutes (check package time).

    Divide noodles and broth among four bowls, discarding whole spices if desired.

    Squeeze fresh lime juice over each bowl and top with basil, cilantro, and mint.
