Ingredients

  • 8 oz chicken breast
  • 6 cups chicken stock
  • ½ whole onion
  • 2 inch piece ginger
  • 3 whole star anise
  • 1 whole cinnamon stick
  • 1 teaspoon coriander seeds
  • 2 tablespoon fish sauce
  • 1 tablespoon rock sugar
  • ½ teaspoon salt
  • 4 oz rice noodles
  • ¼ cup fresh cilantro
  • ¼ cup fresh basil
  • 1 whole lime
  • 1 whole jalapeño
  • 2 tablespoon fried shallots
  • ½ cup bean sprouts

Instructions

    Halve the onion and ginger lengthwise. Char them directly over a flame or under the broiler until blackened, about 2-3 minutes per side.

    Toast star anise, cinnamon stick, and coriander seeds in a dry skillet for 1 minute until fragrant.

    Bring chicken stock to a boil in a large pot. Add charred onion and ginger.

    Add toasted spices, chicken breast, fish sauce, and rock sugar. Simmer for 20 minutes until chicken is cooked through.

    Remove chicken breast and let cool slightly, then slice thinly. Strain broth, discarding solids. Season with salt to taste.

    Cook rice noodles according to package directions. Drain and divide between two bowls.

    Pour hot broth over noodles. Top with sliced chicken breast, cilantro, basil, jalapeño slices, fried shallots, and bean sprouts.
