Ingredients
- 1 lb pizza dough
- ½ cup pesto
- 1 cup cherry tomatoes
- 8 oz fresh mozzarella
- 1 tbsp olive oil
- ¼ cup fresh basil leaves
Instructions
- 1
Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven while it heats.
- 2
On a lightly floured surface, stretch the 1 lb pizza dough into a 12-inch round. Transfer to a parchment-lined baking sheet or pizza peel.
- 3
Spread the 1/2 cup pesto evenly over the dough, leaving a 1-inch border for the crust.
- 4
Tear the 8 oz fresh mozzarella into small pieces and scatter over the pesto. Halve the 1 cup cherry tomatoes and arrange them cut-side up on top.
- 5
Drizzle with the 1 tbsp olive oil. Bake for 12-15 minutes, until the crust is golden and the cheese is bubbly and browned in spots.
- 6
Remove from the oven and scatter the 1/4 cup fresh basil leaves over the hot pizza. Let rest for 2 minutes, then slice and serve.
