Pesto Mozzarella Grilled Cheese

Pesto Mozzarella Grilled Cheese

Ingredients

  • 4 slices bread (white, sourdough, or ciabatta)
  • 4 oz fresh mozzarella
  • 3 tbsp basil pesto
  • 2 tbsp butter, softened
  • ½ medium tomato, sliced
  • 1 pinch salt and pepper

Instructions

    Butter one side of each bread slice evenly with 0.5 tbsp butter.

    Heat a skillet over medium until water droplets sizzle on contact, ~90 seconds.

    Place two slices butter-side down in the skillet. Cook until golden brown, ~2 minutes.

    Spread 1.5 tbsp pesto on the toasted side of each slice in the pan.

    Layer mozzarella and tomato on one slice. Season with salt and pepper.

    Top with the other slice, pesto-side down. Gently press together.

    Flip and cook the second side until golden and cheese oozes at the edges, ~2 minutes.

    Transfer to a plate and serve hot. Repeat with remaining ingredients for second sandwich.
