Ingredients

  • 1.5 lb boneless chicken thighs or breasts, cut into 1.5-inch pieces
  • 2 cups fresh cilantro, roughly chopped
  • 1 medium yellow onion, chopped
  • 1 jalapeño, seeded and sliced
  • ½ cup beer (lager or pilsner), preferably Peruvian
  • 1 cup chicken broth
  • ¾ tsp cumin

Instructions

    Heat olive oil in a large skillet over medium-high. Season chicken generously with salt and pepper, then sear until golden, 3-4 minutes.

    Pulse cilantro, onion, jalapeño, and 0.25 cup broth in a blender until bright green and slightly chunky, about 30 seconds.

    Pour the cilantro mixture into the skillet and stir well. Add beer, remaining broth, and cumin.

    Bring to a simmer over medium heat. Cook uncovered until chicken is tender and sauce thickens slightly, 8-10 minutes.

    Taste and adjust salt and pepper. Serve hot with white rice and lime wedges on the side.
