Ingredients
- 1.5 lb boneless chicken thighs or breasts, cut into 1.5-inch pieces
- 2 cups fresh cilantro, roughly chopped
- 1 medium yellow onion, chopped
- 1 jalapeño, seeded and sliced
- ½ cup beer (lager or pilsner), preferably Peruvian
- 1 cup chicken broth
- ¾ tsp cumin

Heat olive oil in a large skillet over medium-high. Season chicken generously with salt and pepper, then sear until golden, 3-4 minutes.

Pulse cilantro, onion, jalapeño, and 0.25 cup broth in a blender until bright green and slightly chunky, about 30 seconds.

Pour the cilantro mixture into the skillet and stir well. Add beer, remaining broth, and cumin.
