Pav Bhaji

Ingredients

  • 3 tbsp butter
  • 1 medium onion, diced
  • 2 cups frozen mixed vegetables (peas, carrots, potato)
  • ¾ cup canned crushed tomatoes
  • 1.5 tsp pav bhaji masala spice blend
  • 1 pinch salt and pepper to taste
  • 4 whole pav bread rolls (4)

Instructions

    Heat 2 tbsp butter in a large skillet over medium-high until it foams and smells nutty, ~90 seconds.

    Add diced onion and cook, stirring, until it turns soft and golden, about 4 minutes.

    Add frozen vegetables and cook, stirring, for 3 minutes until they start to soften.

    Pour in crushed tomatoes and sprinkle pav bhaji masala over the mixture.

    Simmer uncovered for 8 minutes, stirring occasionally, until vegetables are very tender.

    Mash the mixture with the back of a spoon until chunky-smooth. Season with salt and pepper.

    Heat remaining 1 tbsp butter in a separate skillet or griddle over medium-high heat.

    Slice pav rolls in half. Lay them cut-side down on the griddle and toast until golden, ~2 minutes.

    Divide bhaji between two bowls. Serve with toasted pav on the side for dipping.
