Ingredients

  • 2 tbsp olive oil
  • 1 medium carrot, diced small
  • 1 stalk celery, diced small
  • 6 cups chicken or vegetable broth
  • ¾ cup pastina (small star or round pasta)
  • ½ cup parmesan cheese, grated
  • 3 tbsp fresh parsley, chopped

Instructions

    Heat oil in a pot over medium. Add carrot and celery, cook stirring occasionally until softened, ~4 minutes.

    Pour in broth and bring to a boil over medium-high heat, stirring occasionally.

    Add pastina and cook at a gentle boil, stirring occasionally, until tender, ~6 minutes.

    Stir in half the parmesan. Taste and season with salt and pepper.

    Ladle into bowls. Top each with remaining parmesan and fresh parsley.
