Ingredients

  • 1 cup whole milk
  • ½ cup vegetable oil
  • 1 tsp salt
  • 2 cups cassava flour (polvilho azedo)
  • 3 large eggs
  • 2 cups shredded Parmesan cheese
  • 1 cup shredded Gruyère cheese

    Preheat oven to 375°F (190°C). Line two baking sheets with parchment paper.

    In a medium saucepan, combine milk, oil, and salt. Heat until steaming, about 3 minutes.

    Remove from heat and stir in cassava flour until well combined. The mixture will be thick and sticky.

    Let cool for 5 minutes, then add eggs one at a time, beating well after each addition.

    Fold in both cheeses until evenly distributed. The dough should be thick and hold together.

    Scoop dough onto prepared baking sheets using a small ice cream scoop or spoon, spacing 2 inches apart.
