Ingredients
- 2 cups heavy cream
- ½ cup whole milk
- ½ cup sugar
- 1 teaspoon vanilla extract
- 1 tablespoon unflavored gelatin
- 3 tablespoons cold water

In a small bowl, sprinkle the 1 tbsp gelatin over the 3 tbsp cold water. Let stand for 5-10 minutes until spongy.

In a medium saucepan, combine the 2 cups heavy cream, 0.5 cup whole milk, and 0.5 cup sugar. Heat over medium, stirring occasionally, until sugar dissolves and mixture is hot but not boiling, about 5 minutes.

Remove the pan from heat. Add the softened gelatin and 1 tsp vanilla extract, stirring until the gelatin is completely dissolved, about 2 minutes.

Divide the mixture evenly among 4 ramekins or glasses. Refrigerate until set, at least 4 hours or overnight.

To serve, dip each ramekin in hot water for 5 seconds, then invert onto a plate. Or serve directly in the glass.
