Ingredients
- 1 cup pancake mix
- ¾ cup water
- 4 oz deli ham slices
- 2 egg yolks
- ½ cup butter
- 1 tbsp lemon juice

Whisk 1 cup pancake mix with 0.75 cup water until just combined (lumps are fine). Heat a lightly greased skillet over medium; pour 1/4 cup batter per pancake. Cook until bubbles form on top, about 2 minutes, then flip and cook until golden, 1-2 minutes more. Keep warm.

Melt 0.5 cup butter in a small saucepan over low heat. In a blender, blend 2 egg yolks and 1 tbsp lemon juice until pale. With blender running, slowly drizzle in the hot butter until the sauce thickens, about 1 minute. Season with salt and pepper.

Place 4 oz ham slices on a plate and microwave for 30 seconds until warm, or heat in a skillet for 1-2 minutes. Stack pancakes on plates, layer with ham, and drizzle with hollandaise. Top with chopped chives if you like.
