Ingredients
- 1 lb russet potatoes
- 2 steaks beef steaks (ribeye or NY strip, 1.5 inches thick)
- 2 tbsp butter
- 4 sprigs fresh thyme sprigs
- 3 cloves garlic cloves, smashed
- 1 tsp fleur de sel or sea salt flakes

Cut potatoes into 1/4-inch matchsticks. Toss with 2 tbsp olive oil and salt, spread on a sheet pan in a single layer.

Roast potatoes at 425°F for 18–20 minutes, stirring halfway, until golden brown and crispy at the edges.

Pat steaks dry with paper towels. Season generously with salt and black pepper on both sides.

Heat a heavy skillet over medium-high until it shimmers, about 2 minutes. Add steaks and don't move them.

Sear 90 seconds per side until a golden crust forms. Add butter, thyme, and garlic; tilt the pan and baste continuously for 30 seconds.

Remove steaks to a warm plate. Rest 3 minutes, then finish with a pinch of fleur de sel. Serve with hot fries.
