Ingredients

  • 8 pieces (about 12 oz) landjäger sausage (or similar German smoked sausage)
  • 1 medium apple (Granny Smith or Honeycrisp)
  • 3 tbsp white vinegar
  • 3 tbsp whole-grain mustard
  • ½ tsp caraway seeds (optional)
  • 4 slices dark rye bread or pumpernickel
  • 2 tbsp fresh dill or parsley, chopped

Instructions

  1. 1

Slice the apple into thin wedges. Toss with vinegar, mustard, and caraway seeds in a small bowl.

  2. 2

Score the landjäger skin lightly with a knife. Heat a skillet over medium-high heat, no oil needed.

  3. 3

Sear the sausage 2–3 minutes per side until the skin crisps and the center is warm. Shake the pan occasionally.

  4. 4

Toast the rye bread in the same skillet (or toaster) until edges are golden.

  5. 5

Plate the sausage and toast. Spoon pickled apples and mustard over the top, then sprinkle with fresh dill.
