Ingredients
- 8 pieces (about 12 oz) landjäger sausage (or similar German smoked sausage)
- 1 medium apple (Granny Smith or Honeycrisp)
- 3 tbsp white vinegar
- 3 tbsp whole-grain mustard
- ½ tsp caraway seeds (optional)
- 4 slices dark rye bread or pumpernickel
- 2 tbsp fresh dill or parsley, chopped

Slice the apple into thin wedges. Toss with vinegar, mustard, and caraway seeds in a small bowl.

Score the landjäger skin lightly with a knife. Heat a skillet over medium-high heat, no oil needed.

Sear the sausage 2–3 minutes per side until the skin crisps and the center is warm. Shake the pan occasionally.

Toast the rye bread in the same skillet (or toaster) until edges are golden.
