Ingredients
- 2 fillet white fish fillets
- 1 cup green beans
- 1 medium zucchini
- 2 medium red radish
- 2 tbsp butter
- ½ medium lemon
Instructions
- 1
Pat the 2 fish fillets dry and season both sides with salt and pepper. Heat 1 tbsp of the butter in a large skillet over medium-high heat until foaming.
- 2
Place the fish in the skillet and cook until golden and opaque, about 3-4 minutes per side. Transfer to a plate and set aside.
- 3
Add the remaining 1 tbsp butter to the skillet. Add the 1 cup green beans and 1 sliced zucchini, and cook, stirring, until crisp-tender, about 5 minutes.
- 4
Slice the 2 radishes thinly and add to the skillet with the juice of half a lemon. Cook for 1 minute, scraping up any browned bits.
- 5
Return the fish to the skillet, spoon the vegetables and sauce over the top, and serve hot.
