Ingredients

  • 4 4 oz each chicken breasts, boneless and skinless
  • 2 medium fresh tomatoes, diced
  • ½ cup fresh basil, chopped
  • ¾ cup fresh mozzarella, torn into chunks
  • 2 cloves garlic, minced
  • 3 tbsp olive oil
  • 1 pinch salt and black pepper to taste

Instructions

    Pat chicken dry with paper towels. Season generously on both sides with salt and pepper.

    Combine diced tomatoes, basil, garlic, 1 tbsp oil, salt, and pepper in a bowl.

    Heat 2 tbsp oil in a 12-inch skillet over medium-high until it shimmers, ~90 seconds.

    Sear chicken 5 minutes per side without moving. Edges should brown; interior stays tender.

    Spoon tomato mixture onto each breast, then scatter mozzarella on top.

    Cover skillet, reduce heat to medium, and cook 3–4 minutes until cheese melts.
