- 4 4 oz each chicken breasts, boneless and skinless
- 2 medium fresh tomatoes, diced
- ½ cup fresh basil, chopped
- ¾ cup fresh mozzarella, torn into chunks
- 2 cloves garlic, minced
- 3 tbsp olive oil
- 1 pinch salt and black pepper to taste

Combine diced tomatoes, basil, garlic, 1 tbsp oil, salt, and pepper in a bowl.

Heat 2 tbsp oil in a 12-inch skillet over medium-high until it shimmers, ~90 seconds.
