Ingredients

  • 2 steaks (about 8 oz each) beef ribeye or sirloin steaks (1.5 inches thick)
  • 8 cloves garlic cloves, peeled
  • ½ cup prepared horseradish sauce
  • ¼ cup sour cream
  • ½ cup beef broth
  • 2 tbsp butter

Instructions

    Pat beef steaks dry with paper towels. Season generously with salt and pepper on both sides.

    Heat 1 tbsp butter in a 12-inch skillet over medium-high until it foams. Sear steaks 2 minutes per side without moving — surface should be golden brown.

    Push steaks to the side. Add garlic cloves and remaining 1 tbsp butter to the pan. Toss garlic until golden and fragrant, about 3 minutes.

    Pour beef broth into the pan. Reduce heat to medium, cover, and cook 5 minutes until steaks reach 130°F (medium-rare) on an instant-read thermometer.

    Stir horseradish sauce into sour cream in a small bowl until smooth.

    Transfer steaks and roasted garlic to plates. Serve with horseradish cream on the side.
