Pan-Roasted Kasseler with Mustard Sauerkraut

Ingredients
- 1.5 lb Kasseler (smoked pork loin)
- 2 cups Sauerkraut, drained
- 3 tbsp Whole grain mustard
- 1 tsp Caraway seeds
- 1 medium Onion, sliced
- 2 tbsp Olive oil

Preheat oven to 400°F. Pat kasseler dry with paper towels.

Toss sauerkraut with mustard and caraway seeds in a bowl.

Heat olive oil in a large skillet over medium-high until shimmering, ~90 seconds.

Sear kasseler 2 minutes per side without moving until browned.

Remove kasseler to a plate. Scatter onion into the skillet and stir 2 minutes.

Spread mustard sauerkraut around the skillet. Nestle kasseler on top.

Transfer skillet to oven. Roast 18–20 minutes until kasseler reaches 160°F internally.
