Ingredients

  • 1 lb black pudding (morcilla or blood sausage)
  • 2 tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 whole lemon
  • 2 tbsp fresh parsley, chopped
  • 1 whole apple (optional, for serving)

Instructions

    Slice black pudding into 1/2-inch-thick rounds. Pat dry with paper towels.

    Heat oil in a 12-inch skillet over medium-high until it shimmers, about 1 minute.

    Working in batches, fry pudding slices 2–3 minutes per side until edges crisp and color deepens.

    Transfer to a plate. Season with salt and pepper.

    Squeeze lemon juice over the pudding and scatter parsley on top.
