Ingredients

  • 3 whole large eggs
  • 1 whole flour tortilla (8-inch)
  • 1 tbsp butter
  • ¼ cup sharp cheddar cheese, shredded
  • 1 pinch salt and black pepper
  • 1 tbsp fresh cilantro or chives, chopped (optional)

Instructions

    Crack eggs into a bowl, add salt, pepper, and half the cheese. Whisk until fully combined.

    Heat butter in a 10-inch nonstick skillet over medium heat until foaming, ~45 seconds.

    Place tortilla flat in the skillet. Pour egg mixture directly onto the tortilla.

    Let cook undisturbed for 45 seconds until egg begins to set at the edges.

    Gently push cooked egg toward center, tilting pan so uncooked egg flows to edges. Repeat 2–3 times.

    When top is still slightly wet but bottom tortilla is golden and crispy, sprinkle remaining cheese on top.

    Fold tortilla in half over the egg. Slide onto a plate. Top with cilantro if desired.
