Ingredients
- 2 whole large eggs
- ¼ cup whole milk
- ½ teaspoon vanilla extract
- ¼ teaspoon ground cinnamon
- 4 slices day-old brioche or challah bread
- 1.5 tablespoon butter
- 1.5 cup mixed fresh berries
- 1 tablespoon honey

Crack the 2 eggs into a shallow bowl, pour in the 0.25 cup milk, add the 0.5 teaspoon vanilla extract and 0.25 teaspoon cinnamon, then whisk with a fork until the mixture is uniform and pale yellow.

Place the 4 bread slices on the cutting board; you will use them as-is without cutting, as they are already the right size for soaking.

Set a 10-inch nonstick or cast iron skillet over medium-high heat and add the 1.5 tablespoons butter; wait until the butter melts and foams, about 45 seconds.

Pick up one bread slice, dip both sides into the egg mixture for 2 seconds each side—just long enough to coat but not soak through—then place it in the hot pan.

Cook that slice for 2 minutes until the bottom surface turns the color of warm honey with darker edges, then flip it over with a spatula.

Cook the second side for 1.5 minutes until it matches the color of the first side, then slide it onto a plate and set it to the side.

Repeat steps 4–6 with the remaining 3 bread slices, dipping each one and cooking both sides until golden, stacking them on the plate as you go.

Return the skillet to medium heat, add the 1.5 cups mixed berries, and stir once every 15 seconds until they begin to release their juice and smell fragrant, about 60 seconds.

Pour the 1 tablespoon honey into the berries and stir for 10 seconds until it dissolves and coats them evenly.

Arrange the 4 pain perdu slices on 2 serving plates, placing 2 slices per plate in the center.

Spoon the warm berries and all their liquid over the pain perdu in a single mound on top of each plate.
