Ingredients

  • 1.5 cups fine semolina
  • ½ cup all-purpose flour
  • ¾ cup coconut
  • 2 tsp baking powder
  • 1 cup Greek yogurt
  • 1 tbsp orange zest
  • ¾ cup honey
  • ½ cup fresh orange juice

    Heat oven to 350°F. Oil a 9x13 sheet pan generously.

    Whisk semolina, flour, coconut, and baking powder in a bowl until combined.

    Fold in yogurt and orange zest until a thick, shaggy batter forms.

    Spread batter evenly in the oiled pan. Smooth the top with a wet spatula.

    Bake until golden brown and a toothpick comes out clean, 18–20 minutes.

    While cake bakes, warm honey and orange juice in a saucepan over medium heat until steaming.

    Remove cake from oven. Pour warm syrup evenly over hot cake; let it soak 2 minutes.
