Ingredients

  • 1 lb chicken breast
  • 8 oz mushrooms, sliced
  • 1 cup rice
  • 2 cups chicken broth
  • 1 tsp garlic powder

Instructions

    Season chicken breast with salt, pepper, and garlic powder on both sides.

    Heat oil in a large skillet over medium-high and sear chicken 4 minutes per side until golden.

    Remove chicken, add mushrooms to the same skillet, and sauté until golden, about 4 minutes.

    Stir in rice and broth, then nestle the chicken back on top and bring to a boil.
