Ingredients

  • 1 lb Italian sausage links
  • 2 large bell peppers (red or yellow), cut into 1-inch chunks
  • 1 large zucchini, sliced into 1/2-inch rounds
  • 4 cloves garlic cloves, smashed
  • 3 tbsp olive oil
  • 1 to taste salt and black pepper to taste

Instructions

    Preheat oven to 425°F. Arrange sausage links on a sheet pan.

    Roast sausage for 10 minutes until browned on top.

    Remove pan from oven. Add peppers, zucchini, garlic, and olive oil.

    Toss vegetables to coat evenly. Season with salt and pepper.

    Return to oven for 12 minutes until vegetables are tender and edges caramelize.
