- 2 large eggs
- ½ cup olive oil
- ½ cup milk
- 1 cup heavy cream

In a large bowl, whisk together 1.5 cups flour, 0.75 cup sugar, 1.5 tsp baking powder, and 0.5 tsp salt.

In another bowl, beat 2 eggs with 0.5 cup olive oil, 0.5 cup milk, and the zest of 1 lemon until smooth.

Pour the wet ingredients into the dry and stir just until combined—do not overmix. Pour batter into the prepared pan.
