Ingredients

  • 1.5 cups all-purpose flour
  • ¾ cup sugar
  • 1.5 teaspoons baking powder
  • ½ teaspoon salt
  • 2 large eggs
  • ½ cup olive oil
  • ½ cup milk
  • 1 cup heavy cream

    Preheat oven to 350°F. Grease a 9-inch round cake pan and line the bottom with parchment paper.

    In a large bowl, whisk together 1.5 cups flour, 0.75 cup sugar, 1.5 tsp baking powder, and 0.5 tsp salt.

    In another bowl, beat 2 eggs with 0.5 cup olive oil, 0.5 cup milk, and the zest of 1 lemon until smooth.

    Pour the wet ingredients into the dry and stir just until combined—do not overmix. Pour batter into the prepared pan.

    Bake for 30-35 minutes, until the top is golden and a toothpick inserted in the center comes out clean. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

    Whip 1 cup heavy cream with 1 tbsp sugar until soft peaks form. Spread over the cooled cake and top with fresh blueberries and sliced strawberries.
