Ingredients
- 1 pound okra
- 1 cup chickpea flour
- ¾ cup water
- 1 teaspoon garam masala
- 1 teaspoon salt
- ½ cup plain yogurt
- ¼ cup fresh cilantro
- 2 cups vegetable oil

Trim the 1 pound okra and slice into 1/2 inch rounds. Pat dry with a towel to remove excess moisture.

In a bowl, whisk together 1 cup chickpea flour, 1 teaspoon garam masala, 1 teaspoon salt, and 0.75 cup water until smooth. The batter should be thick enough to coat the okra.

Heat 2 cups vegetable oil in a deep skillet over medium-high until a drop of batter sizzles immediately, about 350°F.

Dip the okra rounds into the batter, letting excess drip off, then carefully add to the hot oil in batches. Fry until golden brown and crisp, about 3-4 minutes per batch.

Remove with a slotted spoon and drain on paper towels. Season with a pinch of salt while hot.
