Nürnberger Bratwurst with Onions & Beer

Ingredients
- 1 lb Nürnberger bratwurst (about 8 oz per person)
- 2 large yellow onion, sliced into thin half-rings
- ½ cup German lager or pilsner beer
- ½ tsp caraway seeds
- 3 tbsp whole-grain mustard (for serving)
- 1 pinch salt and black pepper to taste

Heat 2 tbsp olive oil in a 12-inch skillet over medium-high until shimmering, about 90 seconds.

Add bratwurst and sear without moving for 4 minutes until the bottom edges turn golden brown.

Roll sausages over and sear the other side for 4 more minutes until light brown all around.

Transfer bratwurst to a plate. Lower heat to medium and add sliced onions to the same pan.

Stir and cook onions for 6 minutes until they soften and begin to turn light golden at the edges.

Pour beer into the pan, scraping up any brown bits from the bottom with a wooden spoon.

Return bratwurst to the pan, sprinkle caraway seeds, and simmer for 3 minutes until heated through.
