Ingredients

  • 1 lb Nürnberger bratwurst (about 8 oz per person)
  • 2 large yellow onion, sliced into thin half-rings
  • ½ cup German lager or pilsner beer
  • ½ tsp caraway seeds
  • 3 tbsp whole-grain mustard (for serving)
  • 1 pinch salt and black pepper to taste

Instructions

  1. 1

Heat 2 tbsp olive oil in a 12-inch skillet over medium-high until shimmering, about 90 seconds.

  2. 2

Add bratwurst and sear without moving for 4 minutes until the bottom edges turn golden brown.

  3. 3

Roll sausages over and sear the other side for 4 more minutes until light brown all around.

  4. 4

Transfer bratwurst to a plate. Lower heat to medium and add sliced onions to the same pan.

  5. 5

Stir and cook onions for 6 minutes until they soften and begin to turn light golden at the edges.

  6. 6

Pour beer into the pan, scraping up any brown bits from the bottom with a wooden spoon.

  7. 7

Return bratwurst to the pan, sprinkle caraway seeds, and simmer for 3 minutes until heated through.

  8. 8

Season with salt and pepper. Serve bratwurst and onions with mustard on the side.
