- 2 cups mixed red berries (such as raspberries, strawberries, or lingonberries)
- ½ cup meringue cookies
- 6 leaves fresh mint leaves

In a large bowl, combine 1.5 cups heavy cream, 2 tablespoons sugar, and 0.5 teaspoon vanilla extract. Beat with an electric mixer on medium-high until soft peaks form, about 3-4 minutes; the cream should hold its shape but still be glossy.

If using strawberries, hull and slice them; leave smaller berries whole. You should have about 2 cups total.

Gently fold half of the berries into the whipped cream with a spatula, just until streaks of berry remain, about 2-3 folds.
