Ingredients

  • 1.5 cups heavy cream
  • 2 tablespoons sugar
  • ½ teaspoon vanilla extract
  • 2 cups mixed red berries (such as raspberries, strawberries, or lingonberries)
  • ½ cup meringue cookies
  • 6 leaves fresh mint leaves

Instructions

  1. 1

In a large bowl, combine 1.5 cups heavy cream, 2 tablespoons sugar, and 0.5 teaspoon vanilla extract. Beat with an electric mixer on medium-high until soft peaks form, about 3-4 minutes; the cream should hold its shape but still be glossy.

  2. 2

If using strawberries, hull and slice them; leave smaller berries whole. You should have about 2 cups total.

  3. 3

Gently fold half of the berries into the whipped cream with a spatula, just until streaks of berry remain, about 2-3 folds.

  4. 4

Spoon the berry-cream mixture into 4 serving glasses or bowls, dividing evenly.

  5. 5

Top each serving with the remaining berries, then sprinkle 0.5 cup crushed meringue cookies over the top.

  6. 6

Garnish each with a mint leaf and serve immediately, or chill for up to 1 hour before serving.
