Ingredients

  • 2 cups rolled oats
  • 1 cup unsalted roasted almonds or peanuts, chopped
  • ½ cup honey
  • ¼ cup coconut oil or almond butter
  • ¼ teaspoon salt

Instructions

    Line an 8-inch square baking pan with parchment paper, leaving an overhang on two sides.

    Combine oats, chopped nuts, honey, coconut oil, and salt in a large bowl.

    Stir until the mixture is evenly coated and holds together when squeezed.

    Pour the mixture into the prepared pan and press down firmly with the back of a spoon.

    Refrigerate for 10 minutes until firm enough to cut cleanly.

    Lift the parchment paper out of the pan and cut into 8 equal bars.

    Store in an airtight container in the fridge for up to 1 week.
